Life is about taking a moment and letting someone know it will be alright. No matter how bad things seem to be, good things will come. This moment was so special to me. I was able to make things better for my granddaughter. I will remember this moment, always.

2 Bean Turkey Chili !


Chili is one of my favorite things to eat this time of year. So, I wanted to post a healthy version of it. It is provided by Gracious Pantry. 
Ingredients:


1 1/2 pound lean, ground turkey
5 cloves garlic, chopped fine
1 medium yellow onion, chopped
1 tablespoon olive oil
1 (28 ounce) can diced tomatoes (not drained)
1 (15 ounce) can black beans, no sugar added, drained and rinsed
1 (15 ounce) can kidney or cannellini beans, no sugar added, drained and rinsed
1 pound frozen corn (optional)
2 teaspoons ground cumin
1 tablespoon chili powder
1 (12 ounce) jar of your favorite salsa


Directions:

In a large pot, saute’ the garlic and onion in the olive oil.
Stir in the meat and brown, breaking it up as you stir.
Stir in everything else and cook over medium-high heat until the meat is cooked through. Stir frequently to avoid any burning on the bottom of your pot. If you need extra liquid, you can always stir in a little chicken broth to get the consistency you like. But I found that the salsa was enough. Do what suits your tastes.
Allow to cool and serve.
Note: If you can manage it, store this overnight and enjoy the next day. The flavor is even better on the second day when the flavors have really melded. Yum!

Healthy Fruit Pizza with Oatmeal Cookie Crust


I like to throw my kids a curve ball from time to time. When I call out to tell them that “pizza is on the table,” I love to watch their confusion. They always have a surprised look on their face because their pizza is covered in fresh fruit. That’s right, I duped them with my healthy pizza.
This pizza is a healthier version of some of the other fruit pizza recipes floating around, but it is equally as tasty. The kids really like the drizzled honey that I put on the crust to add a little extra sweetness.
Play around with whatever fruit you have available. I have added sliced apples, pears and bananas. But my kids usually love it when I add lots and lots of berries.

Fruit Pizza with Oatmeal Cookie Crust

  • 1/3 cup grapeseed or coconut oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 1-1/2 cups whole wheat pastry flour (or half white and half whole wheat flour)
  • 3/4 cups rolled oats (not instant)
  • 1-1/2 teaspoons baking powder
  • 1/2 cup chopped pecans
  • Greek yogurt
  • Honey
  • Assorted fruit slices
  1. Preheat oven to 350 degrees.
  2. Line 12-inch pizza pan with parchment paper, allowing it to extend 1 inch over the edge on at least 2 sides; set aside.
  3. In large bowl, whisk together oil, applesauce, brown sugar, egg, & vanilla until well combined.  Add flour, oats, baking powder, cinnamon; stir with wooden spoon until well combined. Stir in chopped pecans.
  4. Transfer dough to center of parchment-covered pizza pan, and spread with back of wooden spoon evenly to edges of pan.
  5. Bake 15 minutes until starting to slightly brown around edges and is firm in center. Cool 15 minutes in pan on cooling rack. Pick up pizza crust using the parchment paper and remove crust from pan.
  6. Transfer to cooling rack; cool completely. Invert onto serving plate; carefully peel off parchment paper. Turn crust over.
  7. Once crust has cooled, drizzle with a small amount of honey
  8. Add a dollop of thick greek yogurt and spread over crust.
  9. Arrange fruit on top of pizza.
  10. Chill for 30 minutes or serve immediately.

When I started this journey I would never of dreamed how hard I would have to fight to make a statement and to be an example to so many people who think that they could ever reach their dreams.  One of the things that has stuck out in my mind is that if you truly want to reach your goals you have to give every ounce of your being to believing in yourself.  See, I have struggled my entire life in truly believing in myself.  What I mean by this is that I have always been a positive person and done new things to engage myself but I have never set such a high goal in myself because I didn’t believe it was possible.  Planning out my goals and learning to take one day at a time, one workout at a time, one meal at a time and each day never giving less than 100%.    Sure, it has been very hard and there have been days that I have cried and said, “Is this worth it?”  What I have had to do is talk to myself and remind myself of the big picture and the impact that I may make on so many people who have always given up. Defining Your Passion

So many people I talk to are not happy with their lives. Recently this happened in a discussion with a friend and I made a point to ask what would make him happy? The answer is almost always the same, he wanted to make a living doing something he loved to do. When asked why he wasn't living that life he replied, "Circumstances and timing has forced me into the situation that I am in today. My friend paused for a moment and then looked me in the eye and said, "Weren't you afraid of losing everything when taking such big risks?"  I replied, "I was more afraid not to take action against my fears for that they might come true!" 
So take a quiet moment to think about where you are and if you want to continue the path your on or is it time to go outside of your comfort zone and follow your passion.
